Spring Smoothie Cubes with Eumundi Farm Fresh ~ Perfect way to get Fussy Kids eating their Greens

As a busy Mum of 3 I’m always looking for nutritious snacks that can be made quickly and easily. Today I’m going to show you a way to maximize your produce.
Making an alternative to ice in your smoothie not only is it nutritious it will maximize the produce and as always we try and promote zero waste.
These cubes can be made with a variety of green vegetables or fruit and are jam packed with nutrients.
Start with a handful of greens today I’m using Kale and Cucumber. Process 1 bunch of Kale and 3 chopped Lebanese Cucumbers and place in blender and blend until smooth. Divide mixture into ice cube trays and freeze for up to two months. To turn into juice, place 6 cubes in a blender, add 1/2 cup coconut water or apple juice, then blend till smooth.
The cubes can be made with a variety of greens and fruit. I take all our ripe fruit such as bananas and berries and also freeze into cubes and once frozen I pop out cubes into a snap lock bag makes it easier to store in freezer.
Kids love them, it’s healthy and a great way to include extra fruit and vegetables into a child’s diet.
