Chicken and Vegetable Stirfry ~ healthy, quick, easy and budget friendly

Yummy Chicken and Veggie Stir Fry made using Eumundi Farm Fresh Produce.

It’s quick, easy and healthy

Ingredients Required

2 tablespoon olive oil

3 chicken breasts

1 Onion

1 Capsicum deseeded and sliced

1 small bunch of brocolli cut into small sections 

3 carrots sliced in 4 cm long slender pieces 

2 garlic cloves

2 fresh chilies 

2 tbs soy sauce 

250g mushrooms

1 tablespoon oyster sauce

1 tablespoon water

100g bean sprouts

coriander leaves

cooked white rice or quinoa as an alternative 


Step 1

Heat frying pan add olive oil. Then add half the chicken breast and stir fry until chicken is sealed and cooked through. Transfer the chicken to a plate and set aside. Repeat the process with the remaining chicken. 

Step 2

Add the remaining oil to the fry pan and heat over high heat until hot add the onion and capsicum and carrots and stir fry for 2 minutes.

Step 3

Add the mushrooms and brocolli and stir fry for a further 2 minutes. Add the garlic and chilies. Season with salt and stir fry for a minute.

Step 4

Add the soy sauce, oyster sauce and water and toss for about 2 minutes. Return the chicken to the frypan and stir until the vegetables and chicken are coated with sauce and the veggies are tender but still crisp.

Step 5

Remove the frypan from the heat and toss through the bean sprouts and coriander and serve with rice or quinoa.
