Delicious Creamy Pumpkin Soup

Can you feel a change in the air… the cooler weather is coming the perfect fine to enjoy a delicious pumpkin soup.

A classic, super easy pumpkin soup that’s fast and full of flavour.

Ingredients required:

2 tbs olive oil

1 leek

1 garlic clove

1kg peeled pumpkin diced

1 large potato

1l Chicken or Vegetable Stock

1/2 cup Maleny Cream

Heat oil add onion and finely sliced leek cook for 2-3 minutes until softened. add garlic and stir.

Add Pumpkin, potato and stock and bring to the boil. 

Turn heat to low and let simmer for 30 minutes. 

Remove from heat and blitz …l I use our thermomix 

Return to pan and stir through cream and season with salt and pepper..

I usually add some extra Maleny Cream for presentation … it’s decadent and creamy. 

Serve with some crunchy baguette…. it’s sure to be a family favourite 😍

Stuffed Zucchini Flowers

 There are so many ways you can eat zucchini flowers, in frittatas, quesadillas, pizzas and pastas but my favourite way is to stuff them with ricotta, herbs and then fry them up until nicely golden with a very light and crispy batter. 

Preparing them is a little difficult as they are delicate and fragile but the effort is well worth it. 

Firstly I start with giving them a good rinse, in the centre is the pistol you want to remove it by pinching it with your two fingers and removing. Next let the flowers dry out a little on a piece of paper towel. 
Next it’s time to make the ricotta mixture and it’s easy simply mix the following ingredients 

200g ricotta

1/4 cup Parmesan 

Zest 2 large lemons

1/4 bunch fresh basil cut finely

1 tsp salt

1 tsp pepper


Then I fill a pastry bag with the ricotta mixture it makes it so much easier to stuff the flowers. 

The batter couldn’t be any simpler to make just two ingredients sparkling water and flour. I just whisk the ingredients together until it’s got a similar consistency as yoghurt not too think and not too runny at the same time.

Heat your oil in a pan just enough oil to cover the bottom gently place zucchini flower into the pan. The result is a batter that is light and crispy similar to a tempura coating.

Zucchini flowers might be a little indulgent but they are insanely delicious.

Beetroot Hummus and Avocado Toast

Beetroot hummus is delicious and gloriously purple. I love this vegan hummus spread on slices of toasted sourdough bread topped with avocado.

This quick and healthy meal can be made ahead of time so to save time during the early morning rush whether it’s getting kids ready for school or off to work.

Our mornings are a tad chaotic with four kids to get ready we’re usually racing around on weekday mornings. There are school bags to pack and shoes to find.
This is my go to brekkie snack that’s quick and healthy…

Beetroot Hummus not only looks pretty, but it has a sweet and subtly earthy flavour. 

  • 400g Chickpeas
  • 2tbsp Tahini
  • 1 Lemon juiced
  • 200 ml extra virgin olive oil 
  • 1 clove garlic
  • 1 Avocado
  • 1 loaf seeded sourdough bred
  • 2 medium sized beetroots


1. Preheat oven to 190 degrees 

2. Remove stalks and peel beetroot I usually do it under running water so I don’t end up with pink stained hands. Cut into cubes and place on a baking tray cover with foil so it doesn’t get too dry. Place in oven for 30 mins until soft.

3. Add the cooled beetroot, chickpeas, garlic, olive oil, lemon juice and tahini to a food processor and whiz until it forms a thick paste.

4. I keep my hummus in a sealed container for 3-4 days so it’s quick and easy to make breakfasts before heading out the door….

If you love pickles on your burger and sandwiches then look no further I have a simple DIY to make your own at home.

All you need is 

5 Lebanese Cucumbers, thinly sliced

1tbs Salt

1cup Caster Sugar

1cup Apple Cider Vinegar

1tsp Mustard Seeds

Place all ingredients in a sterilized jar. Place in the fridge overnight to develop the flavors and store in the fridge for up to 1 week.

The Tomahawk Steak is the creme de la creme in the world of beef, the Tomahawk is simply an on-the-bone Rib eye with most of the rib bone left intact. If cooked correctly it’s melt in your mouth deliciousness.

Being lovers of the outdoors we take full advantage of our Weber and find that it cooks the Tomahawk Steak.

Pre-heat the BBQ to hot. Sear the steak on all sides, including the thick edge. Lower the temperature to medium, close the hood and cook for 15-20 minutes.

Let rest in a warm place covered loosely with foil for 15 minutes.

We served ours with jacket potatoes and sour cream but it’s so versatile that it would also go nicely with a delicious salad.

With the mango season in full swing there are ways to enjoy mangoes all year - round.

🥭Mango Ice Pops

Cut cheeks from mangoes. Peel, them insert popsicle sticks into bases of cut cheeks. Place on a baking paper lined tray and freeze for 3 hours or until frozen. For an extra treat you could dip them into melted dark chocolate and sprinkle with dried coconut. 

🥭Mango Ice Cubes

Wash and peel mangoes then place the cut mango cubes into a blender and blend until smooth. Freeze in ice cube trays and use in smoothies and juices it’s absolutely delicious. The ice cubes can be stored in an freezer proof container for up to 3 months.

🥭Mango Ice Cream 

Blend 1kg of frozen mango cubes, add 1/2 cup of lemon juice and 1tbs of Eumundi Farm Fresh Raw Honey and blend until smooth. Serve immediately.

Apple Walnut Salad with Balsamic Vinaigrette made with Eumundi Farm Fresh Produce.

This delicious Apple Walnut Salad that comes together super quickly. It’s tossed in a delicious tangy balsamic vinaigrette and to versatile you can serve it with just about any of your favourite weeknight dinners. 

The Apple Walnut Salad is the perfect combination of sweet and savory and it’s a fantastic accompaniment to so many dishes.

This salad can be made with a few simple steps

Step 1~ Prepare the Vinaigrette 

In a small bowl combine the olive oil, balsamic vinegar, Dijon mustard and honey and whisk until blended. 

Step 2 ~ Prepare salad ingredients chop and slice salad. I like to core and slice apples very fine.

Step 3 ~ Caramelize some brown onions. In a small frying pan add some butter and a sliced onion cook on medium heat until the onions become golden.

Step 4 ~ Assemble the salad.

In a large bowl, layer the lettuce, apples, red onions, walnuts, and feta. Add caramelized onions. Drizzle with desired amount of vinaigrette and serve immediately.

Vegetable Pizza with Eumundi Farm Fresh Produce

Vegetable Pizza made with Eumundi Farm Fresh Produce ~ it tastes amazing and best of all it was a hit with the kids. 
Made with Eumundi Farm Fresh Produce it’s versatile and you can include your favourite vegetables from your Eumundi Farm Fresh Box.

I purchased a ready made base because I find it easy as the bases freeze well and can be defrosted easily. 

On our pizza I used bbq sauce for the base and popped it into the oven at 180 degrees while I prepared the toppings.

For the toppings I put the frying pan on medium heat and added some olive oil. Then I added diced onions, sliced zucchini and capsicum I like it to look colourful so I used red as well as yellow capsicum I find when it’s colourful the kids are more likely to want to eat it. Using a wooden spoon I gently stir vegetables and then add the mushrooms and stir for around 10 mins until the vegetables begin to soften. 

Once the vegetables begin to soften I removed the pizza base from the oven and covered the base with our vegetables and adding a good cup full  of cheese. Pop the pizza in the oven until the cheese is melted and golden. 

Enjoy it’s quick and easy and so so tasty 😋.

5 DIY Natural Cleaning Eco Friendly Products

Today I will share with you 5 Eco Friendly cleaning tips that are non toxic and  can be easily made from products you have around the house. From the oven to the loo we have it sorted 😎

Toilet Cleaner 

For a sparkling clean loo it’s easy pour some white vinegar into the toilet bowl I use about 500ml then add a good amount of bicarbonate of soda and approx 12 drops of your favourite essential oil into the toilet bowl. Let it sit for a few minutes, then scrub with toilet brush, the mixture will fizzy away all those nasty stains and germs.


Window Cleaner

Mix together 1 part vinegar to 4 parts water and use on windows and mirrors for a fabulous clean without chemicals. Sometimes I add a squeeze of Eumundi Farm Fresh lemons for a wonderful scent.


Mould and Mildew

I fill a spray bottle with white vinegar and add a few drops of tea tree oil for added mould killing properties. I spray the affected area and let sit for approx 1 hr then rise area with clean warm water and rub with a cloth to remove any stubborn mould. 

Microwave Cleaner

I always find the microwave gets dirty so quickly so I found this a fail proof recipe to clean the microwave easily. I place a cup of vinegar in a microwave safe container and add the juice of one lemon and turn on the microwave for 2 minutes. Leave the door closed for a further 2 minutes for the steam then pop open the door and simply wipe away the grime with a cloth.


Oven Cleaner

The oven I always find difficult to clean and it’s hard to remove the grime and always takes plenty of elbow grease but I have a way to easily remove the mess. All I do is combine 1/4 cup bicarbonate of soda, 1 tsp of salt and some warm water. Keep adding warm water to the mixture until you start to form a paste. I cover all sides and the inside of the door and let sit overnight. The next day I scrub and wipe the surfaces with a moist cloth and the grease and grime wipes away easily.

Summer Mango Smoothie

Prep: 5 mins

Servings: 4

You will need the following:

2 Eumundi Farm Fresh Mangoes

1 Cup ice cubes

1 teaspoon vanilla extract

1 tablespoon white sugar

1 2/3 cups of Milk

Step 1

Wash Mangoes and peel, cut and dice. Then place into a blender. Add the ice cubes, vanilla extract, sugar and milk into the blender and blend until smooth.

Pour into large glass and enjoy 😊

Fermenting Food equals Zero Waste something that we’re passionate about at Eumundi Farm Fresh

A few weeks ago we were gifted some delicious pickled vegetables from a family friend and they were delicious and had me wanting to experiment with the process of pickling vegetables.

As I found out it’s really quite easy and the taste is amazing. After some research I found that fermenting vegetables had a range of health benefits. As it turned out Fermented Vegetables add so much flavor and tang to your meals and are an excellent addition to a healthy diet.

At Eumundi Farm Fresh we are passionate about Zero Waste and Fermenting Foods is an excellent way to make food easier to digest, also decreases cooking times and also introduces good bacteria into your body. 

Fermentatiom has been largely used in the past to preserve food to keep food edible without the need for refrigeration.We all use fermented products probably without even realizing things like cheese, vinegar and yoghurt are all fermented foods.

I’m going to be sharing more fermented vegetable recipes with you in the future, but I wanted to start with the easiest and fastest so you can taste for yourself how wonderful and fresh fermented pickled vegetables are.

Fermented Vegetables ~ so bright and vibrant.

To get started grab a mason jar and choose a variety of colored vegetables. Some vegetables I find ideal for fermenting are cauliflower, capsicum, carrots, garlic, cucumber, chili’s and jalapeños. Gather your vegetables and chop and make layers in the jar.

Press down vegetables as much as possible to fit as many as you can into the jar. Dissolve a good quantity of sea salt into water and pour over vegetables filling to just above the vegetables, leaving about 1-2 inches of headspace. This space is important for the fermenting process that will occur - if you don’t leave enough of a space you will have liquid overflow. 

I find that 5 days is a perfect time to leave the vegetables to ferment. As far as how to fit fermented foods into a healthy diet, it helps to know that you don’t need a lot, just a spoonful or a couple of pieces of vegetables once or twice a day I’d enough to get the digestive balance. 

We find them excellent added to salads or even adding them served alongside your family favourite dishes.
